For Christmas last month my grandparents got us a 1/4 cow… which filled our freezer right up! So when it came time to make a meal for my sick family, we thought a nice meaty lasagna would be a good route. After several years of trying different variations of lasagnas we’ve finally found what we think is the perfect one!

Ingredients
- 1 box gluten free lasagna noodles
- 1 large container cottage cheese
- 3 cups mozzerella/parmasean cheese blend
- 1 lb hamburger {or meat of choice}
- 30 oz Spaghetti sauce {basically about half of one of the large/64oz spaghetti sauce jars}
Instructions
- Preheat over to 350 degrees.
- Add thin layer of spaghetti sauce to the bottom of 9x13 baking dish
- Brown hamburger, then add to large bowl with remaining sauce.
- Layer 1: noodles - 1/3 cottage cheese - 1/2 beef/sauce mixture - 1 cup shredded cheese
- Layer 2: noodles - 1/3 cottage cheese - 1 cup shredded cheese
- Layer 3: noodles - 1/3 cottage cheese - 1/2 beef/sauce mixture - 1 cup shredded cheese
- Cover with foil & bake for 45 minutes, then remove foil & bake an additional 10 minutes.
Notes
- If preparing as freezer meal, simply complete all the steps up to covering in foil, then freeze instead of bake. I think it works better to thaw before baking, but if cooking frozen bake for 90 minutes covered, then 15 uncovered. Check that the middle is hot enough!
