Gluten Free Meatball & Vegetable Soup

I’ve clearly been on a soup kick around here…
 

Last week I posted our Sausage & Spinach Soup, and now I have another one for you guys! {& I’ll have to admit, I like this one even better!} It’s pretty simple, which is just how we like things around here, but it turned out great!!

 

Gluten Free Meatball & Veggie Soup

Ingredients
  1. 1 lb carrots*
  2. 1 lb green beans*
  3. 1 onion
  4. 1 can [15 oz] white kidney beans
  5. 24 ounces spaghetti sauce
  6. 1 lb small gluten free meatballs**
  7. 4 cups chicken broth {add DAY OF COOKING}
Instructions
  1. Add all ingredients to crock pot
  2. Cook on Low 6-8 hours
To Freeze
  1. Label freezer bag.
  2. Add all ingredients, except broth, to bag and freeze.
  3. You don't have to thaw before adding to crock pot, but it will be closer to the 8 hour end to get the carrots tender
Notes
  1. *we used fresh baby carrots & green beans, but frozen/diced would work as well!
  2. ** we bought a bag of frozen gf meatballs, but if you need a recipe we have one {here}
