Gluten Free Four Cheese Ravioli

We’ve been talking about making our own ravioli for quite a while now…

I bought some sweet little contraptions on zulily a while back that would make it a lot easier than the time we made heart shaped ravioli… it was surprising simple this round! We all really enjoyed how they turned out: so much so that we’ve already made them twice this week!

Pasta Dough
  1. 2 cups Pamela's Artisan Blend flour
  2. 1 pinch salt
  3. 1 tsp olive oil
  4. 2 eggs
  5. 3/4 cup water
Filling
  1. 8oz Ricotta Cheese
  2. 4oz cream cheese
  3. 1/2 cup Mozzarella, shredded
  4. 1/2 cup Provolone, shredded
  5. 2 tsp Basil
Instructions
  1. Place dough ingredients in bowl, and combine with hands. Knead until smooth.
  2. Combine ingredients for filling, then set aside.
  3. In a large pot, start to bring water to a boil on stove.
  4. Roll out pasta dough to about the thickness of a coin.
  5. For the next part, we used our special pasta/pastry maker to cut and seal our raviolis, but you can easily do it "by hand" as well! Simply cut desired shape, fold {or layer second shape on top,} and seal with fork.GF Ravioli assembly
  6. When all the raviolis are prepped, gently place in boiling water. They will rise to the top of the water when they are ready. {Time will vary based on the size, ours were around 5-8 minutes}
  7. Top with your favorite spaghetti sauce, and enjoy!
