Before I got diagnosed with Celiac Disease one of my favorite restaurants was the Olive Garden; I especially loved their “Zuppa Toscana” {Tuscan Soup}. While Olive Garden does now offer some gluten free options, this soup is sadly not one of them. I think we’ve figured out a pretty good alternative!

Ingredients
- 1 lb sausage
- 1 red onion, finely chopped
- 5 slices bacon, cut into bite size pieces
- 4 cloves garlic, finely chopped
- 6 baby red potatoes, cut into 1/4" slices
- 4 1/2 cups water
- 1/2 bunch kale, roughly chopped
- 3/4 cups heavy cream
- 3 chicken bouillon cubes
- salt & pepper [desired amount]
Instructions
- Brown sausage in skillet, drain & set aside.
- Add onion, bacon, & garlic to skillet. Cook until onions are clear, then switch contents of skillet to a large pot.
- Slice potatoes {we used our William Sonoma french fry cutter:)} & add to pot with water and bouillon cubes.
- Cover & bring to a boil. Simmer 20-25 minutes, until potatoes are almost done.
- Add remaining ingredients, including the sausage, and simmer for 5-7 more minutes. Serve with bread if desired.
