Honey Dijon Pork Chops

This past month we have really been slack-lackin’ in the recipe department! Wes got us back in the groove yesterday with his recipe for Wonderfully Moist Meatballs, and today I have another one to share! I have this terrible habit of coming across delicious looking meals on other blogs, pledging to try them, and then forgetting completely about them. So to remedy that, I’ve started to utilize Pinterest and I’ve been pinning all the new recipes I come across – so glad I did! I found this recipe at Lovely in Pink {and Becca found it here} and I couldn’t wait to try it! Wes loves pork and I love any recipe where I can break out the honey dijon, so it was like a match made in heaven:

If you look back at the original recipes, you’ll notice the onions are much larger and the topping is more of a sauce. Wesley can NOT stand the texture of onions however and so we chop them very very small when we cook with them {seriously, it was like onion cream but the time he was done with the chopper!} Also we modified a few proportions/ingredients based on what we had available. It turned out great though; definitely something we’ll be making again.

Honey Dijon Pork Chops

Prep Time: 5 minutes
Cook Time: 25 minutes
Yields: 3 servings

Ingredients:

  • 2 TBS butter {or oil}
  • 3 boneless pork chops {1″ thick}
  • salt & pepper
  • 1/4 onion, minced
  • 1 garlic clove, minced
  • 3/4 cup chicken stock
  • 1 TBS Honey Dijon dressing {We like Walden Farms}
  • 1 TBS Cilantro
  • 1 TBS Parsley

Directions:
In a large skillet melt butter over low/medium heat. While butter is melting, season both sides of pork with salt & pepper, then add to pan after butter has melted. Cook over medium heat, until no longer pink {or very little} about 7-8 minutes on each side. When pork chops are done, remove from the pan and store in a warm spot {I kept mine between two dinner plates.}

Next, add onion and garlic to pan and heat until soft, about 3 minutes. Then add the chicken stock and herbs and let reduce/thicken 3+ minutes {I wanted a thicker sauce so I let mine simmer longer.} While the sauce was cooking, I heated up some Steam Fresh “Lightly Sauced Red Potatoes & Green Beans” – they complimented the pork chops perfectly! After the sauce has reached your desired thickness, add in honey dijon sauce & stir until heated through, then scoop over pork chops and serve!
